Make this Perfect and Amazing Vegetarian Sandwich (or Salad)!

This vegetarian sandwich (or salad) comes together for a fast meal that can’t go wrong. Eat it straight up or put it between two slices of toasted bread. It’s full of fiber, protein, iron and a host of vitamins! And it takes less than 10 minutes to put together. Plus, it’s sooo good!

Amazing Vegetarian Chickpea Sandwich (or Salad)

  • 1 can chickpeas, drained and rinsed
  • 1/2 avocado (can substitute 1 TB. mayo but you won’t get the same nutritional punch)
  • Juice of 1/2 lemon
  • 1 stalk celery, chopped
  • Chopped fresh or dried dill, to taste (optional)
  • Sriracha, to taste (optional)
  • 1/2 tsp. salt
  • Pepper, to taste

If making a sandwich:

Sliced bread

Mustard, lettuce, tomato, cheese, egg, onion or whatever else you like on sandwiches

This is an easy recipe to double!

In a medium-sized bowl, add chickpeas, avocado and lemon juice. Mash until you get the consistency you like (small chunks are fine). Gently mix in celery, dill and Sriracha (if using), salt and pepper. Taste and adjust seasonings. That’s it for this vegetarian sandwich. Enjoy!
